Cozy and flavorful apple cinnamon muffins perfect for breakfast or brunch.

Ingredients

  • 1 ½ cups all-purpose flour
  • ⅔ cup granulated sugar
  • 2 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • 1 large egg
  • ⅓ cup unsalted butter, melted
  • ½ cup milk
  • 1 ½ cups diced apples

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a muffin tin or line it with paper liners.
  3. In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, cinnamon, and salt. Whisk until blended.
  4. In another bowl, whisk together the melted butter, milk, and egg until combined.
  5. Gradually fold the wet ingredients into the dry mixture until combined, being careful not to overmix.
  6. Gently fold in the diced apples.
  7. Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.

Notes

Store muffins in an airtight container at room temperature for up to three days. For longer storage, freeze individually wrapped muffins.
