  • 8 oz (227g) cream cheese, softened
  • 2 cups (400g) granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 2 ½ cups (312g) all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 ½ cups (225g) fresh strawberries, hulled and diced

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Grease a 9×5 inch loaf pan (or bundt pan) with butter or non-stick spray, then dust with flour.
  3. In a large bowl, beat the softened butter and cream cheese together until fluffy and light, about 3-4 minutes.
  4. Gradually add the granulated sugar, mixing until completely incorporated, about 2-3 minutes.
  5. Add the eggs one at a time, ensuring complete incorporation before adding the next, then mix in the vanilla extract.
  6. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this to the wet mixture, mixing on low speed until just combined.
  7. Gently fold in the diced strawberries and pour the batter into the prepared pan.
  8. Bake for 55-60 minutes, or until a toothpick inserted in the center comes out clean.
  9. Let the cake cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
