1 ½ cups granulated sugar
1 large egg
1 ½ teaspoons vanilla extract
2 ½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
Instructions
Preheat your oven to 350°F (175°C).
In a large mixing bowl, beat together the softened butter and granulated sugar until light and fluffy (about 2-3 minutes).
Add the egg and vanilla extract, mixing until fully incorporated.
In a separate bowl, whisk together the flour, baking powder, and salt. Slowly add this dry mixture to the wet ingredients, mixing just until combined.
Drop rounded balls of dough onto a parchment-lined baking sheet, spacing them about 2 inches apart. Bake for 10-12 minutes, or until the edges are lightly golden.
