Ingredients

  • 1 cup (200g) granulated sugar
  • 1/2 cup (115g) unsalted butter, softened
  • 2 large eggs
  • 1 tsp pure vanilla extract
  • 1 cup (130g) all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream the softened butter and granulated sugar together for about 2-3 minutes until pale and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined.
  5. Pour the batter into a greased 8-inch round cake pan and spread evenly.
  6. Bake for 30 minutes or until the top is lightly golden and a toothpick inserted into the center comes out clean.
  7. Let cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

Try adding in spices or flavors like lemon or almond extract for a twist. For a chocolate version, substitute 1/4 cup of flour with cocoa powder.
