A delicious twist on classic nachos using crispy sweet potato tater tots topped with gooey cheese and vibrant toppings.

Ingredients

  • Sweet Potato Tater Tots
  • Shredded Cheese (Cheddar or Mexican blend)
  • Black Beans (rinsed and drained)
  • Sliced Jalapeños
  • Sour Cream or Greek Yogurt
  • Fresh Cilantro (chopped)
  • Avocado or Guacamole

Instructions

  1. Preheat your oven to 425°F (220°C) or set your air fryer to 400°F (200°C).
  2. Spread the tater tots evenly on a baking sheet lined with parchment paper. Bake for about 25 minutes, flipping halfway through.
  3. Once the tater tots are done, remove them from the oven and sprinkle half of the cheese over them, followed by black beans, jalapeños, and any additional toppings.
  4. Return to the oven for an additional 5-7 minutes until the cheese is melted and bubbly.
  5. Dollop sour cream or Greek yogurt over the nachos and sprinkle with fresh cilantro and avocado.
  6. Serve immediately and enjoy!

Notes

For a lower fat option, consider using dairy-free cheese and yogurt. Be careful not to overload the nachos with toppings to avoid sogginess.
