A delightful dish combining succulent grilled chicken thighs with a flavorful teriyaki marinade, perfect for summer barbecues or family dinners.

  • pounds boneless and skinless chicken thighs
  • 1 cup soy sauce
  • 1 cup packed brown sugar
  • 1 cup pineapple juice
  • 4 cloves chopped garlic
  • 1 tablespoon minced fresh ginger

Instructions

  1. Begin by placing the boneless, skinless chicken thighs in a large bowl or a gallon-sized Ziploc bag.
  2. In a medium bowl, prepare the marinade by mixing together the soy sauce, brown sugar, pineapple juice, chopped garlic, and minced ginger until the sugar is fully dissolved.
  3. Pour the marinade over the chicken, sealing it in the bag or wrapping the bowl tightly with plastic wrap. Marinate for at least 4 hours or overnight for best flavor.
  4. When ready to cook, remove the chicken from the marinade, reserving the marinade for later use. Simmer the marinade in a saucepan over medium heat for 5-10 minutes until slightly reduced.
  5. Preheat your grill to medium-high heat. Place the marinated chicken on the grill and brush with some of the hot marinade. Cook for about 6-8 minutes on each side until the internal temperature reaches 165°F.
  6. Transfer the grilled chicken to a baking dish and pour the remaining hot teriyaki sauce over the top. Serve immediately while hot.

Notes

Use a meat thermometer to check internal temperature for perfect doneness. Store leftovers in an airtight container for up to 3 days.
