  • 1 ½ pounds boneless and skinless chicken thighs
  • 1 cup soy sauce
  • 1 cup packed brown sugar
  • 1 cup pineapple juice
  • 4 cloves chopped garlic
  • 1 tablespoon minced fresh ginger

Instructions

  1. Begin by placing the chicken thighs in a large bowl or a gallon-sized Ziploc bag to prepare for marinating.
  2. In a medium bowl, combine the soy sauce, brown sugar, pineapple juice, garlic, and ginger. Whisk until the brown sugar has dissolved.
  3. Pour the marinade over the chicken, remove air if using a bag, or cover a bowl tightly. Refrigerate for at least 240 minutes, or preferably overnight.
  4. Once ready, take the chicken out of the fridge but keep the marinade. Pour the leftover marinade into a saucepan and simmer for 5-10 minutes.
  5. Preheat your grill to medium-high heat. Add the marinated chicken, brush with some of the hot marinade, and grill for 6-8 minutes per side.
  6. Transfer the grilled chicken to a baking dish, drizzle with remaining sauce, and serve warm to enjoy.
