A delightful dessert combining peanut butter cups with creamy cheesecake and fresh strawberries, perfect for any occasion.

  • 1 cup graham crackers, crushed
  • 1/2 cup unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup strawberries, chopped
  • 2 cups semi-sweet chocolate, melted

Instructions

  1. Prepare the crust by mixing the crushed graham crackers and melted butter in a bowl. Press firmly into lined cupcake tins and bake at 350°F for 5-7 minutes.
  2. Make the cheesecake filling by beating softened cream cheese until smooth, then add powdered sugar and vanilla extract, mixing until light and fluffy.
  3. Fold in chopped strawberries into the cheesecake mixture.
  4. Spoon the cheesecake filling into the crusts in the cupcake tin, smoothing the tops. Chill in the refrigerator for at least 30 minutes.
  5. Melt the chocolate, stirring every 20 seconds until smooth.
  6. Once chilled, drizzle or spoon melted chocolate over the cheesecake layers.
  7. Chill again for another 30 minutes before serving.

Notes

For a dairy-free option, use plant-based cream cheese and vegan chocolate. Consider adding mini chocolate chips or citrus zest for variations.
