Ingredients

Scale
  • 2 cups sushi rice
  • 1 lb fresh salmon fillets
  • 1 cup mayonnaise
  • 23 tablespoons sriracha
  • Soy sauce or gluten-free alternative
  • 4 green onions, chopped

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Rinse the sushi rice under cold water until the water runs clear and cook according to package instructions.
  3. In a small bowl, mix mayonnaise and sriracha to make the spicy sauce.
  4. Chop fresh salmon into bite-sized pieces or flake canned salmon.
  5. In a baking dish, spread the cooked sushi rice evenly, layer salmon on top, and drizzle with spicy mayo, mixing gently.
  6. Bake in the preheated oven for 30 minutes until bubbly and golden.
  7. Garnish with chopped green onions and let cool slightly before serving.

Notes

For best results, avoid overcooking the salmon. Use a broiler for a crispy top if desired.
