Delightful mini pecan pie bites that capture the essence of traditional Southern pecan pie, perfect for any occasion.

Ingredients

  • 1 cup pecans, chopped
  • 1/2 cup unsalted butter, melted
  • 1/2 cup brown sugar
  • 1/2 cup corn syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 package of pre-made pie crust

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a muffin tin with non-stick spray or butter.
  3. Roll out the pie crust and cut into circles, pressing each into the muffin tin cups.
  4. Toast the chopped pecans in a dry skillet over medium heat for 3-5 minutes.
  5. In a bowl, whisk together melted butter, brown sugar, corn syrup, eggs, vanilla extract, and salt until smooth.
  6. Sprinkle a tablespoon of toasted pecans into each crust, then pour the filling mixture over the pecans, leaving space for expansion.
  7. Bake for 12-15 minutes until the filling is set and the crust is golden brown. Let cool before serving.

Notes

These can be made ahead of time and stored in an airtight container. For a chocolate twist, substitute half the pecans with mini chocolate chips.
