A simple, flavorful meal featuring tender chicken thighs cooked with zesty lemon and fresh herbs, served with fluffy rice.

  • 4 boneless, skinless chicken thighs
  • 1 cup long-grain rice
  • 1 lemon (juiced and zested)
  • 2 cloves garlic (minced)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 4 cups chicken broth

Instructions

  1. Rinse the chicken thighs under cold water and pat them dry with paper towels. Season generously with salt and pepper.
  2. In the bottom of your slow cooker, combine the chicken thighs with garlic, oregano, thyme, lemon zest, and lemon juice, ensuring each piece is coated.
  3. Sprinkle the long-grain rice evenly over the chicken and herbs.
  4. Carefully pour in the chicken broth, avoiding disturbance of the rice layer.
  5. Cover the slow cooker and set it on low for 6-7 hours or high for 3-4 hours, until the chicken is cooked through.
  6. Once cooked, use a fork to fluff the rice and mix it gently with the chicken.
  7. Ladle the chicken and rice into bowls and garnish with fresh parsley or extra lemon slices.
