A comforting dish featuring tender beef in a rich garlic butter sauce, paired with melt-in-your-mouth potatoes.

  • 2 lbs beef chuck roast
  • 4 medium potatoes, chopped
  • 1/2 cup unsalted butter
  • 1 onion, diced
  • 6 cloves garlic, minced
  • 2 cups beef broth
  • Salt and pepper to taste

Instructions

  1. Prepare Ingredients: Chop the potatoes, dice the onion, and mince the garlic.
  2. Sear the Beef (Optional): Sear the beef chuck roast in a pan over medium-high heat for about 5 minutes on each side until browned.
  3. Layer the Slow Cooker: Place the chopped potatoes at the bottom of the slow cooker, followed by the diced onions.
  4. Add the Beef: Place the seared or raw beef on top of the vegetables, sprinkling with salt and pepper.
  5. Mix the Sauce: Combine minced garlic, beef broth, and melted butter in a small bowl. Pour over the beef and vegetables.
  6. Cook: Cover and cook on low for 480 minutes or high for 240 minutes until beef is tender.
  7. Serve: Shred the beef with two forks and mix it back into the sauce and veggies before serving hot.

Notes

For a richer flavor, sear the beef before adding it to the slow cooker. Store leftovers in an airtight container for up to 4 days.
