A delicious and easy-to-make dish featuring tender, marinated chicken slices grilled to perfection, enveloped in warm pita with a creamy, zesty garlic sauce.

Ingredients

  • 1 pound chicken thighs or breasts (or firm tofu for vegetarian)
  • 3 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon turmeric
  • Pita bread
  • Fresh cucumber, diced
  • Fresh tomato, diced
  • Red onion, sliced
  • 1 cup Greek yogurt
  • Juice of half a lemon
  • 2 garlic cloves, minced
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine chicken with olive oil, cumin, paprika, garlic powder, and turmeric. Toss until well-coated and marinate for at least 30 minutes.
  2. Heat either a grill or skillet over medium-high heat and cook the marinated chicken for about 5-7 minutes on each side until golden brown.
  3. Meanwhile, prepare the zesty garlic sauce by blending Greek yogurt, lemon juice, minced garlic, salt, and pepper until smooth.
  4. Once cooked, rest the chicken for 5 minutes before slicing into thin strips.
  5. Assemble pita sandwiches with chicken, fresh veggies, and zesty garlic sauce.
  6. Serve immediately while warm and enjoy!

Notes

For a vegetarian version, substitute chicken with firm tofu. Store leftovers in an airtight container in the fridge for up to 3-4 days.
