A comforting pasta dish featuring savory sausage, fresh spinach, and juicy tomatoes, perfect for weeknight meals.

  • 12 oz pasta (penne or your choice)
  • 1 lb Italian sausage (ground or links)
  • 4 cups fresh spinach
  • 2 cups diced tomatoes (fresh or canned)
  • 3 cloves garlic (minced)
  • 1 tsp dried oregano
  • Olive oil (for sautéing)
  • Salt and pepper (to taste)

Instructions

  1. Boil the pasta in a large pot of salted boiling water according to package directions until al dente, about 8-10 minutes. Drain and set aside.
  2. In a large skillet over medium heat, add olive oil and the sausage. Sauté for 5-7 minutes, breaking it into small pieces until browned and cooked through.
  3. Stir in minced garlic and oregano for 1-2 minutes until fragrant.
  4. Add diced tomatoes to the skillet and let simmer for 3-4 minutes.
  5. Mix in spinach and allow it to wilt, about 2-3 minutes.
  6. Fold in cooked pasta, adding reserved pasta water if necessary to achieve the desired consistency.
  7. Season with salt and pepper as desired. Serve hot, with grated Parmesan if desired.

Notes

For a creamier texture, add a splash of cream or ricotta cheese. Substitute sausage with plant-based alternatives for a vegetarian version.
