  • 4 large eggs
  • ½ pound breakfast sausage (pork or turkey)
  • 4 flour tortillas (medium to large)
  • ½ cup shredded cheese (cheddar or your favorite kind)
  • Salt and pepper, to taste

Instructions

  1. In a medium skillet over medium heat, cook the sausage for 5-7 minutes, breaking it up until browned.
  2. In a separate bowl, whisk the eggs, then pour them into the skillet with the sausage and stir gently for 2-3 minutes until cooked.
  3. Lay a tortilla flat, add the sausage and egg mixture, and sprinkle with cheese.
  4. Fold in the sides and roll from the bottom to create a tight cylinder.
  5. Heat a non-stick pan or air fryer, cook the roll-ups seam-side down for about 3 minutes per side or in the air fryer at 375°F for 6-8 minutes until crispy.
  6. Let cool slightly, slice in half, and serve warm with salsa or guacamole.
