  • 2/3 cup light brown sugar
  • 2 tbsp white sugar
  • 1 large egg (room temperature)
  • 1 tbsp vanilla
  • 1 1/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt (if using unsalted pistachios)
  • 1/2 cup roasted and salted pistachios (finely chopped)
  • Flaky sea salt (for sprinkling)
  • 1 dark chocolate bar (chopped, approx 3/4 cup)

Instructions

  1. Brown the butter by melting it in a saucepan over medium heat until it turns a deep golden brown with a nutty aroma. Remove from heat and let it cool slightly.
  2. Preheat the oven to 350°F (175°C) and line a baking tray with parchment paper.
  3. Combine the cooled browned butter, light brown sugar, white sugar, egg, and vanilla in a mixing bowl, whisking until smooth.
  4. Mix the all-purpose flour, baking soda, and salt (if using) in another bowl.
  5. Combine the dry ingredients into the wet mixture, mixing until just incorporated.
  6. Add the chopped dark chocolate and finely chopped pistachios to the dough and gently fold to combine.
  7. Scoop rounded portions of dough onto the prepared baking tray, spacing them apart.
  8. Bake for 10-12 minutes until the edges are golden brown.
  9. Finish by sprinkling flaky sea salt over the warm cookies and let them cool before transferring to a wire rack.
