Warm and nostalgic Rice Krispie Treats made with marshmallows, butter, and crispy rice cereal. Perfect for school lunches or as a sweet treat.

  • 3/4 cup unsalted butter (1 1/2 sticks)
  • Two 10-ounce bags mini marshmallows (total of 20 ounces)
  • 1/2 teaspoon pure vanilla extract
  • Pinch of salt
  • 9 cups crispy rice cereal

Instructions

  1. Line a 9×13-inch baking pan with parchment paper and lightly grease it.
  2. In a large pot, melt the unsalted butter over medium heat.
  3. Once melted, add the mini marshmallows to the pot and stir until completely melted and combined.
  4. Stir constantly and remove from heat as soon as the mixture is smooth.
  5. Remove from heat and stir in the vanilla extract and a pinch of salt.
  6. Fold in the crispy rice cereal until fully coated.
  7. Transfer the mixture to the prepared baking pan and spread it out, pressing down lightly.
  8. Allow to set at room temperature for at least 1 hour.
  9. Once set, lift out of the pan using the parchment paper, cut into squares, and store in an airtight container.

Notes

For best texture, keep in an airtight container at room temperature and consume within 3 days. Freezing is an option for longer storage.
