Ingredients

Scale
  • 1 cup unsalted butter (softened)
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs (room temperature)
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups Rice Krispies
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine softened butter, brown sugar, and granulated sugar. Beat until light and fluffy, about 2-3 minutes.
  3. Add eggs one at a time, mixing well after each addition, and then add the vanilla extract.
  4. In another bowl, whisk together flour, baking soda, and salt. Gradually add to the wet mixture, stirring until just combined.
  5. Gently fold in Rice Krispies and chocolate chips.
  6. Line a baking sheet with parchment paper. Drop cookie dough balls onto the sheet, about 2 inches apart.
  7. Bake for 10-12 minutes until edges are lightly golden.
  8. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

These cookies are best enjoyed warm and can be customized with different mix-ins like white chocolate chips or butterscotch chips.
