Enjoy a fun, crunchy snack that combines crispy cheese and savory pepperoni, perfect for game day or movie night.

  • 150 grams shredded mozzarella cheese (low moisture)
  • 50 grams shredded Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 0.25 teaspoon garlic powder
  • 0.25 teaspoon onion powder
  • 0.25 teaspoon crushed red pepper flakes (optional)
  • 60 grams mini pepperoni slices or chopped pepperoni
  • 2 tablespoons pizza sauce or marinara sauce (optional for drizzling)
  • Crumpled cooked bacon (optional)
  • Chopped black olives (optional)
  • Diced bell peppers (optional)
  • Sliced jalapenos (optional)
  • Dried oregano or basil for garnish (optional)
  • Marinara sauce, garlic butter, ranch dressing, spicy aioli (for dipping)

Instructions

  1. Preheat your oven to 200°C and line a baking sheet with parchment paper or a silicone baking mat.
  2. Combine the shredded mozzarella, Parmesan, Italian seasoning, garlic powder, onion powder, and red pepper flakes in a medium bowl until well mixed.
  3. Spoon approximately 15 grams of the cheese mixture onto the prepared baking sheet, flattening each mound slightly.
  4. Top each cheese disc with one or two mini pepperoni slices and any optional toppings, pressing down lightly.
  5. Bake in the preheated oven for 8 to 10 minutes until the cheese is bubbling and edges are golden brown.
  6. Remove the baking sheet from the oven and let the chips cool on the tray for 2 to 3 minutes before transferring them to a cooling rack.
  7. Serve the chips warm or at room temperature with marinara sauce, garlic butter, ranch, or spicy aioli for dipping.

Notes

These chips are best enjoyed fresh but can be stored in an airtight container for up to 2 days. For longer storage, freeze them in a single layer on a baking sheet and reheat in the oven.
