A delightful twist on the classic grilled cheese sandwich, infused with savory pesto and melty cheese, perfect for a comforting meal.

Ingredients

  • 4 slices of bread (sourdough or whole-grain)
  • 1 cup shredded cheese (mozzarella and sharp cheddar)
  • 1/2 cup pesto (homemade or store-bought)
  • 1/4 cup butter

Instructions

  1. Gather your bread, cheese, and pesto. Pre-shred your cheese if using a block.
  2. Generously spread butter on one side of each slice of bread.
  3. On the unbuttered side, spread about a tablespoon of pesto, layer cheese on top, and add another slice of bread, buttered side out.
  4. Heat a skillet on medium heat for a couple of minutes.
  5. Place the sandwich in the skillet, cooking for 3-4 minutes per side until golden-brown and cheese is melted.
  6. Flip carefully and cook the other side until perfectly toasted.
  7. Remove from skillet, let cool for a minute, slice, and enjoy!

Notes

Pair with a salad or tomato soup for a complete meal. For extra flavor, consider adding red pepper flakes or using different cheeses.
