  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1/2 cup chopped pecans
  • 1 teaspoon vanilla extract
  • 1/2 cup unsalted butter, softened (for frosting)
  • 2 cups powdered sugar
  • 1/4 cup brown sugar (for frosting)
  • 1 tablespoon milk (or more, as needed)
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. Cream the softened butter and brown sugar in another bowl until light and fluffy.
  4. Add the eggs and vanilla extract, beating until smooth.
  5. Gradually mix in the dry ingredients until just combined.
  6. Gently fold in the chopped pecans.
  7. Spoon the batter into cupcake liners, filling each about 2/3 full.
  8. Bake for 15-20 minutes or until a toothpick comes out clean.

Notes

Store in an airtight container for up to 3 days. Cupcakes can be frozen for up to 3 months if un-frosted.
