Delicious miniature pecan pie treats with a rich, nutty flavor encased in a buttery crust, perfect for gatherings or cozy family nights.

  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup butter, softened
  • 1 cup pecans, chopped
  • 1/2 cup corn syrup
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. In a mixing bowl, combine the all-purpose flour and powdered sugar. Cut in the softened butter until the mixture resembles coarse crumbs.
  3. Press the flour mixture firmly into the bottom of each muffin cup to form a crust.
  4. In another bowl, mix the chopped pecans, corn syrup, brown sugar, eggs, vanilla extract, and salt until fully incorporated.
  5. Pour the pecan filling into each crust, being careful not to overfill.
  6. Bake for 15 to 20 minutes, or until the filling is set and lightly browned on top.
  7. Let the bites cool slightly before removing them from the muffin tin. Enjoy warm or at room temperature.

Notes

For best results, ensure butter is softened but not melted. Store in an airtight container for up to 3 days. Can freeze for up to 3 months.
