  • 1/2 cup butter
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 1/4 cup milk (or non-dairy alternative)
  • 1 teaspoon vanilla extract
  • 3 cups old-fashioned rolled oats
  • 2 cups crispy rice cereal
  • 1 1/2 cups chopped pecans
  • 2 cups powdered sugar
  • 34 tablespoons milk (or non-dairy alternative)
  • 1/2 teaspoon vanilla extract

Instructions

  1. Prep your station by lining a large baking sheet with parchment paper. In a bowl, combine the oats, crispy rice cereal, and chopped pecans.
  2. In a medium saucepan, melt the butter with the granulated sugar, light brown sugar, and 1/4 cup of milk over medium heat. Bring to a boil for 1 minute while stirring constantly.
  3. Remove the saucepan from heat and stir in 1 teaspoon of vanilla extract. Pour this mixture over the dry ingredients and mix until everything is well coated.
  4. Shape the mixture into mounds and place them on the prepared baking sheet. Refrigerate for at least 30 minutes to help them set.
  5. For the glaze, whisk together the powdered sugar, 3 tablespoons of milk, and 1/2 teaspoon of vanilla extract until the mixture is smooth. Adjust the milk as needed to reach your desired consistency.
  6. Drizzle the glaze over the chilled bites and allow them to set before serving.

Notes

Store bites in an airtight container at room temperature for up to 5 days. These bites freeze well for up to 3 months.
