  • ½ cup honey or maple syrup

  • ½ cup chopped nuts or chocolate chips (optional)

Instructions

  1. In a medium-sized mixing bowl, combine the creamy peanut butter, honey (or maple syrup), and vanilla extract. Mix until well combined.
  2. Add the rolled oats to the mixture and stir until evenly coated.
  3. If desired, sprinkle in the chopped nuts or chocolate chips and fold them into the mixture gently.
  4. Form the mixture into bite-sized balls, about 1-inch in diameter.
  5. Place the balls on a parchment-lined tray, ensuring they don’t touch each other, and refrigerate for at least 30 minutes to firm them up.
  6. Once chilled, serve as a quick snack or dessert. Store in an airtight container in the fridge for up to a week.
