Delightful coconut cream balls are an easy, no-bake treat, perfect for any occasion with a creamy texture and tropical flavor.

  • 1 cup shredded coconut (unsweetened or sweetened)
  • 1 cup cream cheese (softened)
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Additional shredded coconut for rolling

Instructions

  1. In a mixing bowl, combine the softened cream cheese and powdered sugar until smooth.
  2. Add the shredded coconut and vanilla extract; stir until fully incorporated.
  3. Form the mixture into bite-sized balls, about 1 inch in diameter.
  4. Roll each ball in additional shredded coconut until fully coated.
  5. Place the coated balls on a parchment-lined baking sheet. Refrigerate for about 10 minutes if sticky.
  6. Cover and chill in the refrigerator for at least one hour until firm.
  7. Enjoy chilled or at room temperature!

Notes

Can be stored in an airtight container in the refrigerator for up to a week. They freeze well too!
