Indulge in these easy No Bake Chocolate Oatmeal Bars, combining buttery oats, creamy peanut butter, and rich chocolate for a sweet treat.

  • 1 cup butter (melted)
  • 1/2 cup light brown sugar (packed)
  • 2 tsp vanilla (optional)
  • 3 cups quick oats
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup peanut butter (creamy)

Instructions

  1. Line an 8×8-inch baking dish with parchment paper for easy removal of the bars once set.
  2. Combine the semi-sweet chocolate chips and peanut butter in a medium bowl. Melt them together in the microwave or on a stovetop over low heat, stirring until smooth. Set aside to cool slightly.
  3. Melt the butter and brown sugar in a large saucepan over medium heat, stirring often until fully combined.
  4. Stir in the vanilla (if using), and then add the quick oats. Cook for about 2 to 3 minutes, stirring continuously.
  5. Press half of the oatmeal mixture firmly into the bottom of the prepared dish.
  6. Pour the melted chocolate and peanut butter mixture over the pressed oatmeal layer, spreading it evenly.
  7. Sprinkle the remaining oatmeal mixture on top and lightly press down again.
  8. Drizzle melted chocolate over the top, if desired.
  9. Refrigerate for at least 2 hours until firm. Once set, cut into bars and enjoy!
