A delightful and comforting cornbread that pairs beautifully with soups and stews, perfect for family gatherings or cozy nights in.

Ingredients

  • 1 cup fine cornmeal
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1/3 cup packed light or dark brown sugar
  • 2 tablespoons honey
  • 1 large egg, at room temperature
  • 1 cup buttermilk, at room temperature

Instructions

  1. Preheat your oven to 400°F (204°C) and grease a baking pan or cast-iron skillet.
  2. In a large mixing bowl, whisk together the cornmeal, flour, baking powder, baking soda, and salt until combined.
  3. In another bowl, whisk the melted butter, brown sugar, and honey until smooth.
  4. Add the egg and buttermilk to the wet mixture, mixing until integrated.
  5. Pour the wet mixture into the bowl of dry ingredients and stir until just blended.
  6. Pour the batter into the prepared pan and bake for 20-25 minutes. Check for doneness with a toothpick.

Notes

Store leftovers in an airtight container at room temperature for 2-3 days or freeze for up to 3 months. Add cheese or fresh corn for variations.
