A comforting casserole that combines the rich, creamy textures of macaroni and cheese with the hearty nostalgia of meatloaf.

Ingredients

  • 1 pound ground beef
  • 2 cups cooked macaroni
  • 1 ½ cups shredded cheddar cheese
  • 1 cup milk
  • 2 large eggs
  • 1 cup breadcrumbs
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the macaroni in salted boiling water until al dente (about 8-10 minutes), then drain.
  3. In a mixing bowl, combine ground beef, breadcrumbs, eggs, garlic powder, salt, and pepper. Mix until just combined.
  4. In another bowl, mix macaroni, milk, and 1 cup of cheddar cheese.
  5. In a greased casserole dish, layer half the meatloaf mixture, then the macaroni and cheese mixture, and top with the remaining meatloaf mixture.
  6. Sprinkle the remaining ½ cup of cheese on top.
  7. Bake for 1 hour until the meatloaf is cooked through and cheese is bubbling.
  8. Let rest for 10 minutes before slicing and serving.

Notes

Feel free to substitute the ground beef with turkey or chicken for a leaner version. This dish is perfect for meal prep and tastes even better as leftovers.
