Quick and delightful Pizza Muffins perfect for lunchboxes and family dinners.

Ingredients

  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup shredded mozzarella cheese
  • 1/2 cup pizza sauce
  • 1/2 cup diced pepperoni or chopped vegetables
  • 1/4 cup fresh basil (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, whisk together the flour, baking powder, and salt until well blended.
  3. Fold in the shredded mozzarella and diced pepperoni or vegetables.
  4. Pour in the pizza sauce, stirring gently until just combined.
  5. Grease a muffin tin or line it with paper liners, filling each muffin cup three-quarters full.
  6. Bake for 15 minutes until golden brown and a toothpick comes out clean.
  7. Let the muffins cool for a few minutes before transferring them to a wire rack and serve warm.

Notes

Great for freezing! Store in an airtight container for up to three days or freeze for three months.
