  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • Zest of 1 large lemon
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. In a large mixing bowl, beat the softened butter and sugar until light and fluffy (about 3-4 minutes).
  4. Add the egg, lemon zest, lemon juice, and vanilla extract to the butter-sugar mixture, mixing until well incorporated.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined.
  6. Scoop the dough onto ungreased baking sheets, leaving about 2 inches between each cookie.
  7. Bake for 8-10 minutes, until the edges are lightly golden.
  8. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
