A flavorful and easy-to-make Italian-American dish featuring tender chicken breasts crusted with Romano cheese and brightened by fresh lemon.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup finely grated Romano cheese
  • 1 lemon, juiced and zested
  • 1 cup all-purpose flour
  • 2 large eggs
  • Salt and pepper to taste
  • Olive oil for frying

Instructions

  1. Pound each chicken breast between two sheets of plastic wrap to an even thickness, about ½ inch.
  2. In one bowl, whisk together the eggs, lemon juice, and zest.
  3. In another bowl, mix the flour with salt and pepper.
  4. In a third bowl, place the grated Romano cheese.
  5. Dip each chicken breast in the flour mix, then the egg mixture, and finally coat with cheese.
  6. Heat olive oil in a skillet over medium heat and cook chicken for 4-5 minutes on each side until golden and cooked through.
  7. Let chicken rest for a few minutes, then serve with a drizzle of lemon juice and parsley.

Notes

For a variation, use Parmesan cheese instead of Romano.
