Fluffy, spiced muffins made with Kodiak Cakes mix, perfect for fall breakfasts and snacks.

  • 2 cups Kodiak Cakes Pancake and Waffle Mix
  • 1 cup canned pumpkin puree
  • 1/2 cup brown sugar
  • 1/3 cup vegetable oil or melted coconut oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 teaspoons pumpkin pie spice
  • 1/2 teaspoon baking soda

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a muffin tin or line it with paper liners.
  3. In a large bowl, whisk together the Kodiak Cakes mix, brown sugar, pumpkin pie spice, and baking soda.
  4. In another bowl, whisk together the pumpkin puree, eggs, vegetable oil, and vanilla extract.
  5. Gradually add the wet mixture to the dry ingredients, stirring until just combined.
  6. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  7. Bake for about 18-20 minutes or until a toothpick inserted comes out clean.
  8. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Store muffins in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week. Reheat in the microwave or oven for best results.
