A comforting and sophisticated dish featuring tender chicken in a rich Madeira sauce, perfect for both weeknight dinners and special occasions.

  • 4 Chicken Breasts, skinless and boneless
  • 1 cup Madeira Wine
  • 3 cloves Garlic, minced
  • 1 Shallot, finely chopped
  • 1 cup Chicken Broth
  • 2 tablespoons Butter
  • 2 tablespoons Olive Oil
  • 1 tablespoon Fresh Thyme, chopped
  • Salt and Pepper, to taste

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. In a large skillet, heat olive oil over medium-high heat and sear the chicken for 5-6 minutes per side until golden brown.
  3. Remove chicken and let it rest.
  4. In the same skillet, sauté chopped shallots and minced garlic for 2-3 minutes until softened.
  5. Pour in Madeira wine, scraping up browned bits from the bottom and allow it to simmer for 2-3 minutes.
  6. Add chicken broth and fresh thyme, simmering for another 5-7 minutes until the sauce reduces slightly.
  7. Whisk in butter until melted and glossy.
  8. Return chicken to the skillet, spooning sauce over it. Let it rest before serving.

Notes

Use a heavy-bottomed skillet for even cooking and ensure that chicken is not overcrowded while searing.
