  • 4 Chicken Breasts
  • 8 oz Brie Cheese
  • 1 cup Cranberry Sauce
  • 1 cup Spinach (chopped, optional)
  • 2 tbsp Olive Oil
  • Salt and Pepper (to taste)
  • 1 tsp Thyme (dried or fresh)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Carefully create a pocket in each chicken breast.
  3. Drizzle olive oil over the chicken breasts and season with salt, pepper, and thyme.
  4. In a mixing bowl, combine Brie cheese, cranberry sauce, and spinach (if using), then generously stuff each chicken breast.
  5. Place the stuffed chicken in a greased baking dish and cover with foil, baking for 25 minutes.
  6. Remove the foil and continue baking for an additional 10-15 minutes until golden brown and cooked through.
  7. Let rest for 5 minutes before serving.
