Honey Lime Chicken Avocado Rice

A delicious and healthy meal combining the sweetness of honey, zesty lime, and creamy avocado over fluffy rice. Perfect for lunch or dinner.

  • 4 boneless, skinless chicken breasts
  • 1/4 cup honey
  • 1/4 cup freshly squeezed lime juice
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper, to taste
  • 1 cup white or brown rice
  • 2 cups water or chicken broth
  • 1 tablespoon olive oil for rice
  • 1 ripe avocado, diced
  • 1/4 cup fresh cilantro, chopped
  • 1/2 teaspoon lime zest
  • 1/2 cup sour cream (optional)
  • Lime wedges (optional)

Instructions

  1. Whisk together honey, lime juice, olive oil, garlic, chili powder, cumin, salt, and pepper to create a marinade.
  2. Place the chicken breasts in a resealable bag and pour the marinade over them. Seal and refrigerate for at least 30 minutes or up to 4 hours.
  3. Preheat a grill or skillet over medium-high heat. Remove the chicken from the marinade and cook for 6-7 minutes per side, or until the internal temperature reaches 165°F. Let rest for 5 minutes before slicing.
  4. Cook the rice according to package instructions using water or chicken broth. Fluff the rice with a fork and stir in olive oil, diced avocado, cilantro, lime zest, and season with salt and pepper.
  5. Layer portions of avocado rice in serving dishes and top with sliced honey lime chicken. If desired, drizzle with sour cream and garnish with lime wedges.

Notes

For uniform cooking, keep the chicken breasts of even thickness. Store leftovers in an airtight container in the refrigerator for up to 3 days.
