A comforting family favorite, this Hearty Beef Barley Soup combines tender beef, chewy pearl barley, and fresh vegetables for a nourishing meal.

Ingredients

  • 1 pound chuck or stew meat, diced
  • 1 cup pearl barley
  • 2 large carrots, diced
  • 2 stalks celery, diced
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 6 cups beef broth
  • 2 bay leaves
  • 1 teaspoon dried thyme or 2 fresh sprigs
  • Salt and pepper to taste

Instructions

  1. Prepare the ingredients: Dice beef, chop vegetables, and mince garlic.
  2. Brown the beef in a large pot over medium-high heat for 5–7 minutes.
  3. Sauté the onion, garlic, carrots, and celery until softened, about 5 minutes.
  4. Deglaze the pot with a splash of beef broth, scraping up brown bits.
  5. Add remaining broth, barley, bay leaves, thyme, salt, and pepper. Stir well.
  6. Bring to a boil, then reduce heat, cover, and let simmer for at least 60 minutes.
  7. Remove bay leaves, ladle into bowls, and serve hot.
