A rich and decadent cake combining the deep flavors of Guinness beer with velvety cocoa, topped with Irish buttercream infused with Irish cream liqueur.

  • 1 cup Guinness beer
  • 1 3/4 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1/2 cup unsalted butter, melted
  • 1/2 cup sour cream
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream (for frosting)
  • 1/2 cup powdered sugar (for frosting)
  • 1 cup Irish cream liqueur (for frosting)
  • 1/2 cup unsalted butter, softened (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour a cake pan.
  2. In a large bowl, whisk together the Guinness beer and melted butter until well combined.
  3. Stir in the granulated sugar, eggs, and sour cream until smooth and creamy.
  4. In another bowl, whisk together the all-purpose flour, cocoa powder, baking powder, baking soda, and salt.
  5. Gradually add the dry mixture to the wet ingredients, mixing until just combined. Be careful not to overmix.
  6. Pour the batter into the prepared pan and bake for 30-35 minutes. Check for doneness by inserting a toothpick into the center; it should come out clean when ready.
  7. Allow the cake to cool completely in the pan for about 10 minutes. Then, carefully transfer it to a wire rack to cool completely.
  8. In a mixing bowl, beat the softened butter for the frosting until creamy.
  9. Gradually add the powdered sugar and mix until fluffy.
  10. Pour in the Irish cream liqueur and heavy cream, and continue mixing until smooth and well incorporated.
  11. Once the cake is completely cooled, frost it generously with the Irish buttercream.
  12. Slice and serve to enjoy.

Notes

Store leftover cake covered at room temperature for up to 3 days, or refrigerate for longer freshness.
