Delightful Gnome Mini Cheesecakes, perfect for family gatherings or cozy treats, combining a rich cream cheese filling with a sweet graham cracker crust.

  • 1 cup graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • Fresh berries (strawberries or blueberries for hats)
  • Mini chocolate chips or fondant (for added decoration)

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Press into the bottom of a cupcake pan.
  3. In another bowl, beat cream cheese until smooth. Add sour cream, powdered sugar, and vanilla extract, mixing until silky.
  4. Spoon cheesecake mixture over the crusts, filling them about 3/4 full.
  5. Bake for 20-25 minutes until firm around the edges.
  6. Cool completely in the oven with the door cracked for 30 minutes, then refrigerate for 1 hour.
  7. Decorate with berries and drizzle with chocolate before serving.

Notes

For a gluten-free option, use gluten-free graham crackers. Store leftovers in an airtight container in the fridge for up to 5 days.
