Garlic Butter Chicken Pasta

A quick, comforting weeknight meal featuring chicken, spaghetti, and a rich garlic butter sauce.

  • 1 pound thinly sliced chicken breasts
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon chicken bouillon
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika
  • ½ teaspoon thyme
  • 3 Tablespoons olive oil
  • 16 ounces spaghetti
  • 5 Tablespoons butter
  • 8 cloves garlic, peeled and minced
  • ½ teaspoon crushed pepper flakes
  • ¼ teaspoon black pepper
  • ⅔ cup freshly grated parmesan
  • Salt as needed
  • Fresh minced parsley for garnish (optional)

Instructions

  1. Prepare the pasta. Bring a large pot of generously salted water to a rolling boil. Add the spaghetti and cook until al dente according to package directions. Reserve about ½ cup of the hot pasta cooking water, then drain the spaghetti and set it aside.
  2. Season the chicken. In a medium bowl, combine the thinly sliced chicken with salt, black pepper, chicken bouillon, garlic powder, paprika, and thyme. Toss until the chicken is evenly coated.
  3. Sear the chicken. Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken in a single layer and cook until golden and cooked through, about 3 to 4 minutes per side. Transfer the chicken to a plate and keep warm.
  4. Make the garlic butter sauce. Reduce the skillet heat to medium and add butter. Once melted, add the minced garlic and crushed pepper flakes. Sauté just until fragrant and the garlic is softened, about 1 to 2 minutes.
  5. Finish the pasta in the sauce. Add the drained spaghetti to the skillet, then season with black pepper and stir in parmesan. Toss everything together, adding reserved pasta water a little at a time if needed.
  6. Combine with chicken. Return the cooked chicken to the skillet and gently toss with the pasta. Taste and adjust salt if needed.
  7. Serve. Divide the pasta among plates, sprinkle with extra parmesan and fresh minced parsley if desired. Serve immediately and enjoy.

Notes

Pat the chicken dry before seasoning for better browning. Use freshly grated parmesan for the best flavor. Store leftovers in an airtight container for up to 3 days.
