Garlic Butter Chicken Bites Pasta

A comforting and quick weeknight meal with tender chicken bites in a fragrant garlic butter sauce served over pasta.

Ingredients

  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
  • 8 oz pasta (penne, fusilli, or your choice)
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 1/4 cup grated Parmesan cheese, for garnish
  • 1/4 cup chopped fresh parsley, for garnish

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside, saving a small cup of the pasta water.
  2. Season the chicken bites with salt, pepper, and Italian seasoning in a bowl.
  3. Heat olive oil in a large skillet over medium-high heat. Cook the seasoned chicken for about 6 to 8 minutes until golden and cooked through. Remove and set aside.
  4. In the same skillet, reduce heat to medium and add butter and minced garlic. Sauté for about 1 minute until fragrant.
  5. Return the cooked chicken to the skillet and toss well in the garlic butter sauce.
  6. Add cooked pasta to the skillet and mix until everything is well combined. If the pasta seems dry, add a splash of the reserved pasta water.
  7. Garnish with Parmesan cheese and fresh parsley before serving.

Notes

Let the chicken develop a golden crust for extra flavor. Use reserved pasta water to adjust sauce consistency. Store leftovers in an airtight container in the refrigerator for up to 3 days.
