A comforting weeknight meal featuring tender chicken bites in a rich garlic butter sauce and creamy Parmesan pasta.

Ingredients

  • 1 pound of chicken breast, cut into bite-sized pieces
  • 4 tablespoons of butter
  • 4 cloves of garlic, minced
  • Salt and pepper, to taste
  • 1 cup of heavy cream
  • 1 cup of grated Parmesan cheese
  • 2 cups of pasta (fettuccine or penne)
  • Juice of 1 lemon
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the pasta according to package instructions; drain and set aside. Reserve a small ladle of pasta water if needed.
  2. Melt the butter over medium heat and add the minced garlic, sautéing until fragrant.
  3. Add the chicken pieces, season with salt and pepper, and cook until browned and cooked through.
  4. Reduce heat to low, add the heavy cream and Parmesan cheese, stirring until the sauce is creamy and well combined.
  5. Toss in the cooked pasta and lemon juice, mixing until the pasta is coated in the sauce.
  6. Mix quickly and taste for seasoning, adding more salt or pepper if needed.
  7. Serve warm, garnished with chopped parsley.

Notes

Cut chicken into uniform pieces for even cooking. Use freshly grated Parmesan for the best texture. Store leftovers in an airtight container in the refrigerator for up to 3 days.
