  • 1 ½ lbs (680g) boneless chicken breast, cut into bite-sized pieces
  • 2 tbsp olive oil
  • 4 tbsp butter, divided
  • 4 garlic cloves, minced
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ½ tsp black pepper
  • ¼ tsp red pepper flakes (optional)
  • 12 oz (340g) pasta (penne, fettuccine, or spaghetti)
  • 2 tbsp butter (for the sauce)
  • 4 garlic cloves, minced (for the sauce)
  • 1 ½ cups (360ml) heavy cream
  • 1 cup (100g) grated Parmesan cheese
  • ½ tsp salt (for the sauce)
  • ½ tsp black pepper (for the sauce)
  • ¼ cup (15g) chopped fresh parsley (for garnish)

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside, reserving a half cup of pasta cooking water.
  2. Heat the skillet: Place a large skillet over medium-high heat and add 2 tbsp olive oil and 2 tbsp butter.
  3. Season the chicken: Toss the bite-sized chicken pieces with paprika, Italian seasoning, ½ tsp salt, and ½ tsp black pepper.
  4. Cook the chicken bites: Add the seasoned chicken to the hot skillet and cook for 5 to 6 minutes until golden brown and cooked through.
  5. Add garlic and spice: Push the chicken to the side, add the minced garlic and red pepper flakes, and cook for another 1 to 2 minutes until fragrant. Remove the chicken and set aside.
  6. Make the creamy sauce: In the same skillet, melt the remaining 2 tbsp butter over medium heat. Add the other 4 minced garlic cloves and sauté for about 1 minute.
  7. Simmer the cream: Pour in the heavy cream and bring to a gentle simmer.
  8. Add Parmesan: Gradually stir in the grated Parmesan cheese until melted and smooth.
  9. Combine pasta and sauce: Add the cooked pasta to the skillet and toss until evenly coated, adding reserved pasta water if needed.
  10. Return the chicken: Stir the cooked chicken bites back into the skillet.
  11. Garnish and serve: Sprinkle with chopped fresh parsley and serve hot.

Notes

To prevent sauce from tightening, gently rewarm and stir in reserved pasta water. For lighter versions, reduce butter or use less Parmesan.
