French Onion Chicken Orzo Casserole

A delightful comfort food that combines tender chicken, caramelized onions, and creamy cheeses in a savory orzo casserole.

Ingredients

  • 1 lb chicken breast (diced)
  • 1 cup orzo pasta
  • 2 large onions (sliced)
  • 2 cups beef or chicken broth
  • 1 cup shredded Gruyère cheese
  • 1 cup shredded mozzarella cheese
  • Salt and pepper (to taste)
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a medium skillet over medium heat, add olive oil and sauté sliced onions for 15-20 minutes until golden brown and caramelized.
  3. Add diced chicken to the skillet, season with salt and pepper, and cook for 5-7 minutes until browned.
  4. In a large bowl, combine sautéed onions, cooked chicken, orzo, and broth. Stir until well mixed.
  5. Transfer the mixture to a greased baking dish and spread evenly.
  6. Top with shredded Gruyère cheese followed by shredded mozzarella.
  7. Cover with foil and bake for 20 minutes, then remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden brown.

Notes

Pairs well with a side salad or garlic bread. Can be made ahead and stored in the refrigerator before baking.
