French Onion Chicken Orzo Casserole

A comforting casserole made with tender chicken, rich French onion soup, and creamy orzo, topped with melted cheese.

  • 2 cups orzo pasta
  • 1 lb boneless, skinless chicken breasts
  • 2 large onions, thinly sliced
  • 2 tablespoons olive oil
  • 1 can condensed French onion soup
  • 2 cups shredded cheese (Swiss or Gruyère)
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet over medium heat, add olive oil and sauté the sliced onions until golden brown and caramelized, about 10–15 minutes.
  3. Push the onions to the side, add chicken breasts, and cook until no longer pink in the center, about 5–7 minutes. Season with salt, pepper, and thyme.
  4. Cook orzo in salted boiling water until al dente, about 8–10 minutes, then drain.
  5. In a mixing bowl, combine sautéed onions, chicken, cooked orzo, and French onion soup. Stir to mix.
  6. Transfer mixture to a greased casserole dish and top with shredded cheese.
  7. Bake for 25–30 minutes or until cheese is melted and golden. Let cool for a few minutes before serving.

Notes

For a richer flavor, consider using homemade French onion soup. You can also swap chicken for ground turkey or use rice/quinoa instead of orzo.
