  • 4 large eggs
  • 1 cup milk
  • 1 cup all-purpose flour
  • 1 tsp vanilla extract
  • 1/4 cup unsalted butter
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a blender or mixing bowl, combine the eggs, milk, flour, vanilla extract, and salt. Blend until smooth.
  3. Place your cast-iron skillet or baking dish in the preheated oven for about 5 minutes until hot.
  4. Carefully remove the skillet and add the butter, swirling until it melts.
  5. Pour the pancake batter into the skillet; it should sizzle as it hits the hot butter.
  6. Bake for 15-20 minutes until puffed up and golden brown.
  7. Remove from oven, slice into wedges, and serve immediately with your favorite toppings.
