A vibrant and flavorful Peruvian chicken dish marinated in spices and served with zesty Aji Verde and fluffy cilantro rice.

  • 2 lbs Chicken Breasts
  • 1 cup Aji Verde Sauce
  • 1 cup Cilantro, chopped
  • 1.5 cups Long-Grain Rice
  • 3 cups Chicken Broth
  • 4 cloves Garlic, chopped
  • 1 Lime, juiced
  • 2 tbsp Olive Oil

Instructions

  1. In a mixing bowl, combine Aji Verde, garlic, lime juice, and olive oil. Add chicken breasts, ensuring they are coated, then marinate for at least 30 minutes.
  2. Cook rice in chicken broth according to package instructions, adding half of the chopped cilantro during the last 5 minutes.
  3. Preheat grill or air fryer to 375°F and grill chicken for 6-8 minutes per side until cooked through.
  4. Let the chicken rest for 5 minutes, then slice and serve with cilantro rice and drizzled Aji Verde.

Notes

Feel free to substitute chicken with tofu or shrimp and adjust the cooking times. For a milder version, reduce jalapeños in Aji Verde.
