  • 1 Beef Tenderloin
  • 2 tablespoons Olive Oil
  • 3 cloves Garlic, minced
  • 2 tablespoons Fresh Thyme
  • 2 tablespoons Fresh Rosemary
  • Salt, to taste
  • Black Pepper, to taste

Instructions

  1. Preheat your oven to 425°F (220°C). Trim any silver skin from the tenderloin and pat it dry with paper towels.
  2. In a small bowl, mix olive oil, minced garlic, thyme, rosemary, salt, and pepper. Rub this mixture all over the beef.
  3. Heat a large skillet over medium-high heat, add a drizzle of olive oil, and sear the tenderloin for 2-3 minutes per side until deeply browned.
  4. Transfer the seared tenderloin to a roasting pan and roast for 20-25 minutes for medium-rare or until the internal temperature reaches 135°F.
  5. Remove from the oven, cover with aluminum foil, and let it rest for 10 minutes before slicing.
  6. Slice into thick medallions and serve warm.

Rest the meat for at least 10 minutes after roasting to ensure juiciness.
