3 medium apples (about 3 cups, peeled, cored, and chopped)
1 cup granulated sugar
1 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 cup unsalted butter, softened
2 large eggs
1 teaspoon vanilla extract
1/2 cup rolled oats
Instructions
Preheat your oven to 350°F (175°C).
Prepare the apples: Peel, core, and chop the apples into bite-sized pieces. Toss them with a sprinkle of cinnamon and set aside.
In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
Add in the eggs one at a time, mixing well after each addition, followed by the vanilla extract.
In a separate bowl, whisk together the flour, baking powder, salt, and remaining cinnamon. Gradually add this to the wet mixture, stirring until just combined.
Gently fold in the apple mixture.
In a small bowl, combine flour, oats, and remaining butter to form a crumbly mixture for the topping.
Pour the apple batter into a greased baking pan and sprinkle the crumble evenly on top.
Bake for 35-40 minutes, or until golden brown and a toothpick comes out clean.
