  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1/2 cup milk
  • Vegetable oil for frying
  • Powdered sugar for dusting

Instructions

  1. In a large mixing bowl, combine the flour, sugar, baking powder, and salt. Whisk until well incorporated.
  2. In another bowl, whisk together the eggs, milk, and vanilla extract until combined and slightly frothy.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined, being careful not to overmix.
  4. Heat the oil in a pot or deep fryer to approximately 350°F (175°C).
  5. Drop tablespoons of batter into the hot oil, frying until golden brown, about 2-3 minutes per side.
  6. Remove the beignets with a slotted spoon and let them drain on a paper towel-lined plate.
  7. Serve immediately, dusted with powdered sugar.
