  • 8 oz cream cheese
  • 1 can chili beans
  • 1 can diced tomatoes
  • 2 cups chicken broth or stock
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 2 green jalapeños, sliced (optional)

Instructions

  1. Place the boneless chicken in the slow cooker and season with salt, pepper, cumin, and chili powder.
  2. Sprinkle the diced onion and minced garlic over the chicken.
  3. Pour in the canned diced tomatoes and chili beans, mixing gently.
  4. Add the chicken broth to cover the ingredients.
  5. Cover and set the slow cooker on low for 6–8 hours or high for 3–4 hours.
  6. About 30 minutes before serving, add the cream cheese and stir until melted.
  7. Serve hot, garnished with toppings of your choice.
